8b. Garlic Rosemary Bread

Today I decided to tackle my main goal and attempt a actual loaf of bread. I received a recipe from a friend that seemed to be fairly approachable. It was hailed as the easiest, no fuss, best tasting, no knead bread available. I was cautious but decided to attempt this milestone. Without any further preamble here is the recipe! Note that this is a overnight recipe because it takes 12-18 hours to let the dough rise.

 

Ingredients

  • 1 head of roasted garlic
  • 1 tablespoon of olive oil (for roasting the garlic)
  • 3 cups of flour
  • 1 1/2 teaspoons of salt
  • 1/2 teaspoon of yeast
  • 1 1/2 cups of room temperature water
  • 1/ tablespoon of chopped rosemary

 

Instructions

  1. Heat oven to 425 degrees
  2. chopping off the top of the tip of the head of the garlic, place it in tin foil, pour on the olive oil and wrap in tin foil
  3. roast garlic for 40-45 mins (until soft and garlic comes out like a paste leaving the shell behind)
  4. Mix flour, salt, yeast, rosemary, and roasted garlic in a large bowl
  5. Add water and stir, should form a rough dough
  6. Cover bowl tightly in plastic wrap and let sit for 12-18 (overnight)

                   Wait for dough to rise

  1. Preheat oven to 450 degrees and place dutch oven in to preheat metal
      1. (pizza stone, or cast iron pane work as alternatives, but a cup of water needs to be added into the oven to keep moisture then)
  2. Gently work the sticky dough into a circle on a floured surface (the less you touch it the better)
  3. Lightly grease the dutch oven
  4. Place dough in the pan and place the dutch oven with lid on in the oven for 30 mins
  5. Remove lid and continue baking for 10 minutes
  6. Cool bread on a cooling rack

 

Thoughts

This recipe was such a success and so easy! I was beyond impressed with how it turned out. The smell of the fresh rosemary and roasted garlic was amazing and those flavours infused into the bread was incredible. Freshly baked bread is now one of my favourite things. The recipe said that this recipe can be adapted to not include the garlic and rosemary to make a normal loaf or alternate ingredients can be added for different flavourings. I will definitely be trying some of these other suggestions. This was such a good Saturday night activity, took little time and effort, let it sit out over night and then in the morning I had fresh out of the oven bread to go with my coffee.
